Keep rotating ghee making and eating.   TBH, the nuttiness you get when making ghee from store bought butter will be less intense than if you go the fresh milk - yogurt - churn - skim off the cream and make ghee. That will have a lot more milk solids and give more nuttiness. Just cook the ghee 15-30mins more than you usually do to remove as much moisture as possible.   US homesteaders confirm go the bottom route - starting from fresh milk - and their ghee likely not "cooked" long enough to remove all moisture hence spoils quicker maybe?   NTUC butter already low moisture - no such issues.   Moi buy expensive EVOO from Greece, Spain and Portugal a few times. Small bottle one - but need to finish within 3-4 months of bottling and 1month of opening. Cos that oil contains a lot of the olive pulp + moisture so got spoil ..
